| Short Description | Notes from the producer The Ferrarini recipe gives Mortadella Bologna PGI a distinctive fragrance , a natural softness , and a full, rounded flavor , typically Emilian. PGI (Protected Geographical Indication) is the designation reserved for cured meat products that meet the conditions and requirements established by the Consortium 's production regulations . The requirements concern the production area, raw materials, processing, and organoleptic characteristics. The meats used – the main cut is mostly obtained from the pork shoulder – are carefully selected, minced, and mixed with lardons, spices, and natural flavorings. Even for the fatty cuts, the most consistent and valuable part of the pig, the throat fat, is selected. The mixture is then stuffed into casings and cooked for a long time, right down to the core of the product, in special air ovens. The final phase is cold-watering and cooling. Mortadella Bologna PGI Ferrarini is gluten-free, free from milk proteins, and lactose. |
