| Short Description | Caciocavallo is a type of stretched-curd cheese made out of cow's milk. The taste is similar to Provolone cheese, with a hard edible rind. It is aged in humid caves and tends to develops sharp, spicy flavours. With prolonged aging, the cheese adopts earthy undertones and fruity aromas and becomes more salty. Best enjoyed with Primitivo red wine. |
